The biggest problem with sitting is that it wouldn't work with Movecraft (especially with custom additions like DC) and there are supposedly many dumb exploits that can be performed with these kinds of plugins, like glitching through walls. But even there are no exploits the first problem remains, people falling out of their crafts due to sitting would be an annoying problem to deal with.
